

| 18th July 2007 Dear Chaîne member: On behalf of the Bali council, it is my pleasure to announce our fourth Dinner Amical of the Confrérie de la Chaîne des Rôtisseurs du Bailliage de Bali for 2007. This event will be held on the 4th August in the Dava restaurant at The Ritz Carlton Hotel in Jimbaran and is entitled "Australian Truffle Night". Fellow Chaine member & General Manager Mr. David Wilson plus Chef de Cuisine - Dean Keddell, Restaurant Manager - Putu Suantara & the team at Dava will create a selection of mouthwatering dishes featuring freshly gathered Western Australian truffles kindly donated by The Wine & Truffle Company in W.A. (see attached booklets for further insights on the company and their products). Cocktails will be served on the terrace from 7pm and Dinner will be served in the restaurant at 8pm. We can all look forward to another exciting evening of fine wines coupled with some of the finest fare available on Bali, all carefully prepared by a world-class team. As you are all aware the Chaine demands the highest levels of culinary artistry, our dinners are intimate affairs and for this special evening we have seating for a maximum of 60 guests.
